Over the New Year holiday weekend, I had four days off. I wish I could have enjoyed it more, but I was still dealing with the nagging cold. The positive side of that was that I got lots of rest and relaxation to start the New Year off right!

- Breakfast: Kashi Sunshine cereal with almond milk, Danactive, 2 peices toast with earth balance
- Lunch / Dinner: Indian food (Monsoon Masala in Pleasant Hill, CA): lentils, naan, veggie stew, curried rice (so, so, so good!)

- Snack: few dark chocolate squares, handful of prunes, cookie, few bites of hubby’s naan bread, lifesavers

- Dessert: Kashi honey sunshine cereal with almond milk, tea and honey

- Breakfast: whole wheat toast with earth balance, DanActive
- Lunch: Rubio’s Fiesta Salad
- Snacks: chocolate cookie, few candies from christmas
- Dinner: Did a few cooking experiments and had small portions of each.
1.) 1/2 acorn squash with earth balance & maple syrup
2.) Roasted veggies (zukes, tomatoes, eggplant, red pepper) on roasted spaghetti squash topped with mozzarella and parm cheese. This was AWESOME. I cannot wait to make this again.

Spaghetti Squash with Roasted Veggies
First, I roasted the squash….
Then, I cooled it a bit and carved out the spaghetti-like strands with a fork….
I am the most culinarily-challenged person in the world. If I can do it, you can too.
Then, I roasted the veggies.
Mixed the squash and veggies together, topped with parm & mozz cheeses and a couple splashes of balsamic vinegar. Here is the final product. It doesn’t look to appetizing, but it was amazing and I think I’m going to make it again tonight. I call it, the Spaghetti Squash & Roasted Veg Hodgepodge”…..
