Coming back to work after the long weekend was tough, so tough in fact that I didn’t really go back except for Tuesday. I “worked from home” on Monday and Wednesday. Things at work have been so busy and tough that I was relieved to have such an easy week.

Today I was really down and out from the cold. Sore throat, congestion, fatigue. My sister was convinced this would be a 24 hour thing (she and her household also had it) and they were over it in no time at all. [Note, as I write this on January 10, 2010, I am still getting over the same cold!!]
- Breakfast: Toast with earth balance, DanActive
- Lunch: Farro & White Bean Soup
- Snacks: truffles, orange, crackers & cheese, lifesavers
- Dinner: leftover egg casserole in multigrain wrap
- Dessert (as if I needed dessert!): cookie(s), and cereal with almond milk

Today I had 2 adventures all in one meal. See below for details.
- Breakfast: O’s cereal with almond milk, DanActive
- Snacks: lifesavers, cheese & crackers, dried fruit, orange
- Lunch: Farro & White Bean soup
- Dinner: Shiratake noodles, with fake alfredo sauce and roasted brussles sprouts

Adventure #1 – Roasting frozen brussels sprouts
I love veggies, but I’m not always inspired to cook them in a timely enough manner to keep lots of them around the house. So, I buy frozen but they don’t taste as good microwave-steamed as they do when they’ve been roasted and get nice and brown on the outside.
So, I decided to get crazy and roast frozen brussels sprouts. It actually worked much better than expected. They weren’t as good as fresh roasted brussels sprouts, but they were much better than microwave-steamed.
It went so well, I am looking forward to trying the same with other veggies like grean beans and peppers!

Adventure #2 – Shiratake Noodles!
I had read about Shriatake noodles on the Hungry Girl website. They sounded too good to be true at 40 calories for the whole darn bag!
When I spotted them at the store I was so excited to give them a try. They also have a pretty long shelf life, so you can buy them and not have to worry about them expiring too soon.
Unfortunately they weren’t too good for me. They were flavorless and slimy. But I am going to try them again. I did a little bit of research and read that these noodles are much better for Asian dishes because they absorb flavors from sesame oils, soy sauces, etc. much better. I will also stirfry the noodles to dry them a bit. At a minimum, they should be rinsed and patted dry.

….and just to finish things up, I wanted to show that my fake “alfredo” sauce was from these 3 ingredients and it worked out great!
